Fusilli with Spinach and Asiago Cheese

Ingredients

  • 1 pound fusilli pasta
  • 1/4 cup olive oil
  • 1 garlic clove, minced
  • 1 (9-ounce) bag fresh spinach, roughly chopped
  • 8 ounces (1/2 pint) cherry tomatoes, halved
  • 1 cup (about 3 1/2-ounces) grated Asiago
  • 1/2 cup grated Parmesan
  • 1 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper

Directions

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain pasta reserving 1/2 cup of the cooking liquid.
Meanwhile, warm olive oil in a large, heavy skillet over medium-high heat. Add the garlic and cook until fragrant, about 2 minutes. Add the spinach and tomatoes and cook until the spinach wilts, about 2 more minutes. Add the cooked pasta and toss. Add the cheeses, salt, pepper, and the pasta cooking liquid and stir to combine.
Transfer the pasta to a serving plate and serve.

Garlic Broccoli Pasta Recipe

Ingredients

  • 1-3/4 cups uncooked rigatoni or large tube pasta
  • 2 cups fresh broccoli florets
  • 3 garlic cloves, minced
  • 4-1/2 teaspoons  Extra Virgin Olive Oil or Canola Oil
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper

Directions

  • Cook pasta according to package directions. Meanwhile, place broccoli in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 4-5 minutes or until crisp-tender.
  • In a saucepan, saute garlic in oil until tender. Drain pasta(reserve some water); add to saucepan and toss to coat. Add the broccoli, Parmesan cheese, salt and pepper; toss to combine. 
  • If the pasta seems dry add a small amount of pasta water
  • Yield: 4 servings.

Main Course

ANDI'S GREAT RECIPEE FOR STUFF

Items Needed

1 Lb cheap stuff
1 tsp salty stuff
1 tsp peppery stuff
1 tsp lemon juicy stuff
1 tsp vinegary stuff
1 tsp cinamony stuff
1 tsp chilli powdery stuff
1 tsp cummin stuff (yes it's a seasoning)
1 tsp garlicy stuff
1 tsp oreganoy stuff
1 tsp sugary stuff
1 cup floury stuff
1 cup cornmealish stuff
1 cup beer - for the chef
2 cans tomatoe soup
4 slices of bread
4 slices of cheese
the last three items can be increased depending on how well you want the kiddos fed

Instructions:

Combine all items except soup, bread and cheese, let simmer about 30 mins... when the kids come in and say ewww what is that stuff... tell them it's Andi's stuff but, if they're hungry there's a coupla cans of soup and some bread and cheese to make themselves some soup and cheese sandwiches or you would be more than happy to serve them the stuff instead.

CAUTION:

If one of the kids decides to taste the stuff...call 911 immediately. Your welcome. Always happy to help out the mommies any way I can :-)

Seasoned Fan Potatoes

Ingredients

2 medium baking potatoes
1 teaspoon Italian seasoning
1/2 teaspoon salt
1 tablespoon butter, melted
2 tablespoons finely shredded Cheddar cheese
1 tablespoon grated Parmesan cheese
1 tablespoon minced fresh parsley

Directions

1.With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Fan potatoes slightly. Place in an ungreased 8-in. square baking dish. Sprinkle with Italian seasoning and salt. Drizzle with butter. Bake, uncovered, at 425 degrees F for 50 minutes. Sprinkle with cheeses and parsley; bake 10-15 minutes longer or until lightly browned.

Hot Wings

Ingredients

oil for deep frying
1/4 cup butter
1/4 cup hot sauce
1 dash ground black pepper
1 dash garlic powder
1/2 cup all-purpose flour
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
10 chicken wings

Directions

1.Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.

2.In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.

3.Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

Honey Mustard Dressing

Serves 3
Ingredients

1/4 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice

Directions

1.In a small bowl, whisk together the mayonnaise, mustard, honey, and lemon juice. Store covered in the refrigerator.
