Ingredients
- 1-3/4 cups uncooked rigatoni or large tube pasta
- 2 cups fresh broccoli florets
- 3 garlic cloves, minced
- 4-1/2 teaspoons Extra Virgin Olive Oil or Canola Oil
- 1/4 cup shredded Parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
Directions
- Cook pasta according to package directions. Meanwhile, place broccoli in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover and steam for 4-5 minutes or until crisp-tender.
- In a saucepan, saute garlic in oil until tender. Drain pasta(reserve some water); add to saucepan and toss to coat. Add the broccoli, Parmesan cheese, salt and pepper; toss to combine.
- If the pasta seems dry add a small amount of pasta water
- Yield: 4 servings.
