Mama Neely's "Sock It To Me" Cake

Ingredients

Filling:

  • 2 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup chopped pecans

Glaze:

  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons milk
  • 2 tablespoons lemon juice

Cake:

  • 1 package golden cake mix
  • 4 large eggs
  • 1 cup sour cream
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 1/4 cup sugar
  • 2 tablespoons all-purpose flour

For filling:

Directions

For streusel filling, combine all ingredients and set aside. Blend glaze ingredients and set aside.

For cake:

Preheat oven to 375 degrees F.
Combine cake mix, eggs, sour cream, oil, water, sugar and flour in a large mixer bowl. Beat at medium speed for 3 minutes with electric mixer. Pour 1/2 of batter into a greased 13 by 9-inch pan. Sprinkle streusel filling on top and swirl the filing. Spoon remaining batter evenly over filling. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool in pan 25 minutes invert onto serving plate, cool completely.

For glaze:

Combine sugar, milk and lemon juice in bowl. Whisk until smooth. Drizzle over cake.

STRAWBERRY PRETZEL JELLO SALAD

3 CUPS CRUSHED PRETZELS
3/4 CUP MELTED BUTTER
3 TBSP. SUGAR
1(8OZ.) PKG. CREAM CHEESE
1 LG. COOL WHIP
1 LG. STRAWBERRY JELLO(6OZ.)
2CUPS BOILING WATER
2 (10OZ.) PKGS. FROZEN STRAWBERRIES, THAWED AND SLICED

MIX PRETZELS,BUTTER,SUGAR.AND PAT INTO 9X13 PAN. BAKE AT 375 FOR 8 MINUTES.COOL

MIX SUGAR AND CREAM CHEESE, THEN ADD COOL WHIP. SPREAD OVER CRUST AND PUT IN REFRIGERATOR. COMBINE STRAWBERRY JELLO, WATER AND STRAWBERRIES: CHILL UNTIL LIVERY. ABOUT 10MINS. POUR OVER CREAM CHEESE. REFRIGERATE UNTIL FIRM

Easy Peach Cobbler

1 STICK BUTTER
1 CUP SUGAR
3/4 CUP SELF RISING FLOUR
3/4 CUP MILK
1LG. CAN SLICED PEACHES ( or any canned fruit)
9x9 SQUARE PAN


MIX FLOUR, SUGAR, AND MILK. POUR OVER BUTTER WHICH HAS BEEN MELTED IN BAKING DISH. ADD PEACHES AND BAKE AT 350 FOR 35-40 MINUTES. UNTIL BROWN ON TOP
WHEN YOU DO THIS DON'T MIX WHEN YOU PUT IN BAKING DISH AND YES THE PEACHES WILL BE ON TOP BUT DONT FRET CAUSE IT WILL COVER ITSELF.

Chocolate Sheet Cake

2 st margarine
4 tbsp cocoa
2 c sugar
2 eggs
1/2 c buttermilk or sour cream
1/2 c crisco
1 c water
2 c plain flour
1 tsp vanilla
1 tsp soda

sift flour and sugar, bring margarine, crisco,cocoa and water to a boil, pour over flour and sugar, add milk mixed with soda , add eggs and vanilla,beat well
bake 45 minutes at 300 degrees in long shallow pan

Icing
1 st margarine
4 tbsp cocoa
1/2 c buttermilk or 6 tbsp milk
1 box of confectioners sugar

bring margarine, cocoa and buttermilk (milk) to boil
add confectioners sugar, beat well and pour over cake as soon as it comes from oven.top with pecans if desired

Chocolate Pound Cake

1 lb butter
1/2 c. shortening
3 c. sugar
5 eggs
3 c. flour
1/2 tsp baking powder
1/2 tsp salt
4 tbsp cocoa
1 c milk
1 tbsp vanilla
................................
Cream together butter and shortening, add sugar and eggs,sift dry ingredients
and add vanilla, add alternately with milk to creamed mixture.
Bake in 9 to 10" tube pan at 325 for about 80 minutes

Icing
1 1/2 c powdered sugar
1 st butter
1to 2 tbsp cocoa
all in pan bring to boil, add milk to thin while boiling
pour over cake

Cheese Cake

Ingredients:

Cake
2 - 8 oz cream cheese
1 - 16 oz sour cream
5 -  eggs seperated
1 cup sugar
1 tsp vannilla
1 tsp lemon

Crust
8 Zweiback cookies
1 tbsp butter

Crush Zweiback cookies into crumbs.  Melt butter and mix.  Grease a 9" spring pan.  Spread crumbs evenly in the bottom.

In a large bowl cream 2 pkgs of cream cheese and sugar.  Mix in egg yolks one at a time. Add sour cream, vanilla, lemon juice and beat till smooth and creamy.

In a seperate bowl beat egg whites till stiff and forms peaks.  Fold the egg whites into the batter.  Pour into pan.

Preheat oven to 350.  When oven is heat reduce heat to 325 and place cake in ontop of a 9" pie tin filled with water.  (or place a pan of water on the lower rack)
Bake 1 hour and 15 minutes then start lowering the heat 25 degress every 10-15 minutes.  Once you hit 200 degrees turn the oven off and leave the cake in for 1 hour.  Then open the door and let cool to room temp.  DO NOT OPEN THE DOOR BEFORE IT IS DONE.
